Yes, you can use JS to set the value of the recipients field.
But, FormMail already has the feature to protect your email address from spammers - check out the AT_MANGLE setting in the config section.

Per your documentation, an input tag for recipients must be put into the HTML form page i.e. <input type="hidden" name="recipients" value="you@your-host-name.com" />
Can a javascript function be used to compile the email address instead of putting the actual email address in the page? I'm concerned that putting an email address on the page could lead to unwanted spam.
