Have you declared utf-8 in the header of your form page?

Hi all,
I think I've tried everything!
I must have sent myself some 30 emails in the past 2 hours!
Here's the problem:
I'm using the latest version of Formmail - "Awesome!", as our American friends would say - on a French-language website.
I've set up Formmail to use an HTML mail template.
Formmail, my form and the template all work perfectly, except for one thing: any accented characters entered in the form appear garbled in the email I receive.
I have tested my form both with and without the "charset" option (in mail_options).
With the charset option, I've tried both iso-8859-1 and utf-8.
I've tried changing the charset in the template, and tested both iso-8859-1 and utf-8.
Nothing doing!
Nothing seems to work.
Any help would be much appreciated.
TIA.

Thanks for taking the time to reply, Ben.
In fact, no, I haven't tried that.
I'll give it a try, but I'm sceptical.
The page is generated dynamically by a php script, so I will probably have to look for the container page.
Thanks for the tip!
BTW, on another test earlier today, everything worked fine! Hmmm...
I'll still try declaring utf-8 in the header of the form page, though.
Regards.
